akevitt: the national drink, distilled from potatoes, often flavoured with caraway or other aromatic seeds and spices, matured in oak casks, drunk icecold in small quantities
ansjossmør: butter with chopped marinated sprats
bacalao: klipfish simmered with onions, potatoes, tomatoes, paprika, garlic and olives
bankebiff: beef sautéed in butter, simmered in bouillon, served with diced potato
bayerøl: medium strong dark beer
benløse fugler: fried rolled slices of veal or beef stuffed with forcemeat, served with gravy, potatoes and vegetables or salad
betasuppe: thick meat and vegetable soup
biff à la Lindstrøm: minced beef, beetroot, potato, vegetables, shaped in patties, fried, served with fried onions and piquant cream sauce
biskopskake: cake with almonds and raisins
bløtkake: rich layered sponge cake
bokkøl: strong dark beer
cardinalsuppe: diced ham soup with noodles and cream
ertesuppe: pea soup with bacon, pork and onions
fenalår: cured, smoked or salted leg of mutton, dried and hung
ferske reker: unshelled prawns, usually served with lemon, toast and butter
fiskeboller: fishballs in white shrimp sauce
fiskegrateng: fish soufflé
fiskekabaret: assorted seafood and vegetables in aspic, served with bread, butter and mayonnaise sauce
fiskepudding: flaked fish in white sauce with potatoes and vegetables
fisk på fat: fried or baked fish in sauce or sour cream
fiskesuppe: fish soup
flatbrød: thin barley or rye wafers
fleskepannekake: pancakes with pork
fløteost: cream cheese
fløtemysost: mild sweetish cheese made from cow's milk whey and cream
fløtevafler: waffles with cream and cloudberries or jam
fritert flyndrefilet: deep fried flounder fillets, usually served with boiled potatoes or chips, cucumber or mixed salad and a herb-flavoured mayonnaise sauce
fårikål: mutton or lamb in cabbage stew with potato dumplings and black peppercorns
gammelost: pungent strong extra mature semisoft blue-veined grainy cheese made with skimmed milk
geitost: pungent goat's milk whey cheese
gløgg: grog made with cinnamon, raisins, almonds, ginger, cloves, cardamom, other spices and fruit juice
gravlaks: salt and sugar cured salmon, stored under pressure in the dark, often served with salt and a dill and mustard sauce or with sliced potatoes in a white sauce
Gudbrandsdalsost: mild slightly sweet cheese, made from cow's and goat's milk
hjortetakk: type of doughnut
Hoffdessert: layers of meringue and whipped cream, topped with chocolate sauce and toasted almonds
hvalkjøtt: whalemeat, popular in Northern Norway
hveteboller: sweet rolls with cinnamon and raisins
høns med ris: chicken and seasoned rice
italiensk salat: sliced ham, apple, potato, onion, carrot, peas in mayonnaise dressing
Jarlsbergost: mild semi-hard cheese with holes, slightly sweet
julegris: marzipan in the shape of a pig; a traditional Christmas gift for children.
julekake: Christmas cake with raisins, angelica, candied peel, cinnamon and butter, sometimes with beer
juleribbe: roast spare ribs, usually served with sweet and sour cabbage stew and boiled potatoes (Christmas dish)
